Penne, spinach, and ricotta bake

Nothing beats a hearty, Italian-inspired meal, and this recipe is a great one to get the kids involved in cooking!

Method

  • Step 1

    Sauté the onions in a little olive oil with the garlic. Add the tinned tomatoes and tomato purée, followed by the vegetable stock. Mix well and let simmer for 1 hour over low heat until a fairly thick tomato sauce is achieved. Remove from heat, add the sliced basil leaves and leave to cool.

  • Step 2

    Now cook the penne in plenty of boiling water for about 10 minutes. Drain and refresh in cold water. Set aside for later.

  • Step 3

    Mix the spinach with the ricotta cheese and season with salt and pepper. Add the lemon zest and reserve for later.

  • Step 4

    In a baking dish, place a layer of penne on the bottom, then spoon on some spinach mix. Next, spoon over a little of the tomato sauce and continue to layer with each component.

  • Step 5

    Finish by pouring the white sauce over the top and sprinkling with the Cheddar cheese. Bake at 170 ̊C for 40 minutes.
