Turkey Meatballs with Penne Pasta and Melted Cheese

Serves: 6

Ingredients: Method:
  • 450g penne pasta, dried, follow packet instructions for cooking
  • For the Tomato Sauce
  • 2 x 400 g chopped tomatoes
  • 1 small onion – diced
  • 1 garlic clove, crushed
  • 1 tbsp olive oil
  • 120g grated cheddar cheese
  • Optional – garnish with chopped fresh basil

For the meatballs:

  • 720g turkey mince
  • 100g breadcrumbs
  • 1 free range egg, beaten
  • 1 tbsp dried oregano
  • 1tsp salt
  • 1tsp ground pepper
  1. Make the meatballs – place the Turkey mince into a mixing bowl, followed by the breadcrumbs, beaten egg, herbs and seasoning. Mix the ingredients thoroughly, once all combined, roll into approximately 30g size meatballs.
  2. Place the meatballs onto a baking sheet and bake in a preheated oven at 170˚C for 12 minutes.
  3. Make the tomato sauce – Heat the olive oil in a medium saucepan, add the onion and garlic, and gently cook over a low heat until soft. Now add the chopped tomatoes and simmer for approximately 20 minutes. Place the cooked meatballs into the tomato sauce and simmer for a further 5 minutes.
  4. Cook the pasta following the manufacturer’s instructions. Once cooked, drain and keep warm.
  5. To serve, combine the cooked hot pasta, meatballs and sauce.  Divide between your serving plates and top with a sprinkle of grated cheddar cheese and fresh basil.
