Sichuan Style Dan Dan Beef on Noodles with Sweet Chilli

Serves: 6

Ingredients: Method:
  • 720g minced beef
  • 2 garlic cloves, large, crushed
  • 1 red chilli, finely sliced
  • 1 thumb-sized piece of fresh ginger, peeled and very finely chopped
  • 2 fresh peppers, sliced
  • 1 large white onion, sliced
  • 120ml dark soy sauce
  • 80ml rice wine vinegar
  • 1 tsp white sugar
  • 3 tsp Sichuan pepper
  • 450g egg Noodles, dried– follow packet instructions to cook
  • 6 tbsp sweet chilli sauce
  • ¼ bunch fresh coriander, chopped
  1. Place a large frying pan over a medium-high heat with a drizzle of oil, add the minced beef, and stir the beef to break it down into small pieces as it browns.
  2. Once the beef has browned, add the garlic, chilli, ginger, peppers and onions, and continue to cook for a further 5 minutes, until slightly softened.
  3. Now add soy sauce, rice wine vinegar, sugar and Sichuan pepper, and combine all ingredients. Cook for a further 5 minutes.
  4. Add the cooked egg noodles to the frying pan and combine all ingredients together, and the beef and egg noodles are evenly distributed.
  5. To serve, divide into 6 bowls, drizzle each bowl with the sweet chilli sauce and finish with fresh coriander.
