Mediterranean vegetable flatbread pizza

Pizza is always a crowd-pleaser, and this recipe has the added benefit of being loaded with fantastic fresh vegetables.

Serves: 6

Method

  • Step 1

    Sauté the garlic and half the onion in a little oil for 1 minute. Add the chopped tomatoes and tomato purée and then season with salt and pepper. Cook over medium heat until the sauce is reduced by ⅓, then remove from heat and allow to cool.

  • Step 2

    Place a griddle on the stove and heat it. Finely slice the courgette lengthways and cook on the griddle until the slices begin to brown. Be sure to cook on both sides.

  • Step 3

    Preheat the oven to 200°C. Roll out the bread dough into a long, thin strip approximately 20 centimetres wide and 60 centimetres long. Leave to prove for 10 minutes, then brush with a little olive oil and place in the oven for 5 minutes.

  • Step 4

    Spread enough tomato sauce over the pizza base to cover and top with the rest of the onion, sliced courgettes, sunblush tomatoes, olives and sliced vine ripened tomatoes.

  • Step 5

    Slice the basil leaves and scatter over the pizza.

  • Step 6

    Tear the mozzarella into pieces and scatter over the pizza. Place into a hot oven again and cook until golden brown, approximately 20 minutes.

Far from being unhealthy, if you make it with the right ingredients, pizza can be a good way to eat more vegetables.
