BBQ chicken with chow chow coleslaw

A popular dish with a twist, using crunchy chow chow instead of cabbage for the coleslaw.

Method

  • Step 1

    Place the chicken pieces in a large bowl. In a separate bowl, mix together the ingredients for the BBQ marinade and then pour it over the chicken pieces, coating each fully. Allow to marinate overnight in the refrigerator.

  • Step 2

    To make the coleslaw, dice the onion and place into a mixing bowl. Grate or cut the chow chow into very thin strips and add this to the bowl. Grate the carrot, add to the bowl and mix all the ingredients together.

  • Step 3

    Mix in the crème fraîche, then add the chopped parsley and chilli and mix through. Season with salt and pepper and place in the refrigerator.

  • Step 4

    Place the chicken pieces on a roasting rack set over a tray. Roast in the oven at 170°C until cooked through and golden brown and sticky (approximately 35 minutes).

  • Step 5

    Serve the BBQ chicken with the coleslaw.
