Festive Orange and Fig Cheesecake

A seasonal showstopper, this Basque-inspired cheesecake, with zesty orange and beautifully sweet figs.

Cooking Time: 40 mins plus cooling time

Serves: 8

Method

  • Step 1

    Mix together the cream cheese (bring to room temperature), cornflour and caster sugar.

  • Step 2

    Add the eggs and beat.

  • Step 3

    Add the vanilla bean paste, orange zest and double cream and mix well.

  • Step 4

    Line a spring gateaux tin with parchment paper and pour in the mixture.

  • Step 5

    Place in a preheated oven at 220°C for 20 minutes to brown the top.

  • Step 6

    Drop the temperature to 140°C for 20 minutes or until it wobbles when lightly pushed.

  • Step 7

    Take out of the oven and leave to cool in the tin.

  • Step 8

    Place in the fridge overnight, until ready to serve.

  • Step 9

    Remove the cooked cheesecake from the tin and cut into portions. Place on plates and serve with the sliced orange and figs.
