Pork Ribs with Potato and Chive Salad
This popular recipe is bursting with flavour, making it perfect to share with friends.
Method

Step 1
Prepare the ribs - slice the pork ribs into single ribs and place into a saucepan. Cover with water, add the vegetable stock paste and paprika and simmer for approximately 30-40 minutes until the meat is tender.

Remove ribs from the cooking liquid, now place into an oven dish and coat with the BBQ sauce. Roast at 180°C for 15-20 minutes until the ribs are caramelised.

Step 3
Prepare the potato salad - cook the new potatoes in a pan of boiling salted water until tender. Cool the potatoes, by running under cold water to stop the cooking process.

Step 4
In a mixing bowl, add the Greek yoghurt, finely chopped onions and chopped chives. Cut the cooked potatoes into halves, add to the bowl and combine all ingredients. Season with salt and pepper.
