Pancakes with summer berries

These Scotch pancakes with plenty of fresh, seasonal berries make a wonderful weekend treat for family and friends.

Method

  • Step 1

    The easiest way to make the batter is to put all the ingredients into a blender and blitz for 20 seconds. To mix up the batter by hand, place the flour, baking powder, salt and sugar into a bowl and mix well. Make a well in the centre and add the egg, melted butter and milk. Mix well with a whisk. Transfer to a clean bowl and leave to rest for 30 minutes.

  • Step 2

    Heat a smooth griddle or pancake pan on the stove at medium heat.

  • Step 3

    Place a little oil and butter on the griddle or pan and spoon small dollops of the pancake batter onto it (approximately 10 centimetres in size—the recipe should make 12 pancakes).

  • Step 4

    When the top of the pancake is blistering and bubbling, turn it over and cook the other side for a minute (or less if it becomes too brown).

  • Step 5

    Cut the strawberries into quarters and mix with the blueberries and raspberries.

  • Step 6

    Place 2 pancakes on each plate with a scattering of berries on top, then drizzle with honey and serve.
