Cuban-Inspired Dirty Veggie Burger

Serves: 6

For the burgers

  • 2 tsp olive oil
  • 1 large red onion, diced
  • 2 garlic cloves, crushed
  • 1½ tbsp Cajun spice
  • 1 tsp cumin seeds
  • ½tsp oregano
  • ½ tsp black pepper
  • 1 tsp salt
  • 3 tbsp tomato purée
  • 1½ 400g tin mixed beans
  • 70g breadcrumbs
  • 1 handful fresh coriander

For the salsa

  • 1 large tomato, diced
  • ½ a red onion, diced
  • ½ a green pepper, diced
  • Juice of a lime
  • 1 tsp Cajun spice
  • 1 small handful fresh coriander

6 burger buns
6 tbsp mayonnaise
½ tbsp Sriracha sauce

  1. Place a frying pan onto a medium heat, add the oil and sauté the onions and garlic until softened.
  2. Now add the dry spices, seasoning, tomato purée and cook for a further 2 minutes.
  3. Rinse the mixed beans, drain well and then place into a mixing bowl. Add the softened onion mix, breadcrumbs, fresh coriander and combine all ingredients together.
  4. To form the burgers, lay out a length of cling film onto your work surface, place the burger mixture onto the cling film and roll, squeezing the air out, to roughly a 5-inch round cylinder. Place in the refrigerator to chill for a few hours.
  5. Once chilled, place the burger roll onto a chopping board and slice into half inch burgers.
  6. Place on a lightly greased baking try and cook in a preheated oven at 180°C for approximately 12 -15 mins.
  7. To make the salsa, place the diced vegetables into a bowl, add the Cajun spice, herbs and lime juice, combine all ingredients.
  8. To serve, mix the mayonnaise with the Sriracha sauce and spread onto the bottom of the bun, add the burger and top with the salsa.
