Watermelon and Feta Salad

Light, colourful and easy to prepare, this refreshing salad is a perfect addition to any summer table.
Method

Step 1
Cut the watermelon into 2cm dice and put into a large mixing bowl.

Crumble the feta cheese into the bowl and add the pumpkin seeds.

Step 3
Add the pea shoots and season with salt and pepper.

Step 4
Drizzle some olive oil over the top and mix together.

Step 5
Divide between 6 plates and serve.
