North-African Inspired Chermoula Lamb Kofta with Chickpea Sauce

Fragrant North African spices, fresh herbs and succulent lamb combine with a creamy chickpea sauce for a vibrant, flavour-packed dish.

Step 1
To make the Chermoula marinade, place all the marinade ingredients into a food processor and blend until a paste is formed. Season with salt and pepper to taste. 2. Place the lamb into a bowl. Place the lamb into a bowl. Add the onion, Chermoula marinade, black pepper and a pinch of salt and mix thoroughly. If you want to check the seasoning, take a small piece of the lamb and pan-fry it; adjust the seasoning if needed.

Using wet hands, mould the lamb around wooden sticks (about 170g per person) to form sausage shapes.

Place into a suitable container and leave to marinate in the fridge for 2 hours.

Cook in the oven at 180°C for 15 minutes.

Place the chickpeas, Tabasco, cumin, lemon juice, yoghurt and water into a food processor. Blend until a sauce is formed. Season with salt and pepper.

Serve this with the cooked koftas
