Apple and blackberry oaty crumble

What could be better than ending a meal with a crumble? Simple and delicious!

Method

  • Step 1

    Heat the oven to 170°C.

  • Step 2

    Mix the plain and wholemeal flour with the Demerara sugar in a large bowl. Add the butter and rub it into the flour mixture using your fingertips to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy. Now add the porridge oats and mix in.

  • Step 3

    Peel, core and cut the apples into large chunks. Put the compote butter and caster sugar in a medium saucepan and melt together over a medium heat. Stir in the apples and cook for 3 minutes. Add the blackberries and cinnamon and remove from the heat, then leave for 2–3 minutes to continue cooking in the warmth of the pan.

  • Step 4

    Place the warm fruit into an ovenproof gratin dish, top with the crumble mix, then bake in the oven for 35 minutes or until golden brown on top.

  • Step 5

    Serve with custard or crème fraîche.
